Lerøy Austevoll is a subsidiary under Lerøy of the Austevoll Seafood Group that is dedicated to the complete processing of salmon and trout, ranging from the handling of whole fish to vacuum packed fillets in boxes. In their endeavors to meet the requirements of the customers, the salmon or trout are either sent after the initial processing, i.e. after slaughtering, gutting, and scaling, or after filleting, skinning, and vacuum packing.
The challenge
Lerøy Austevoll detected a shift in the market towards cleaner fish which prompted them to find a solution that would live up to their processing needs. The search for the right solution ultimately presented them with two options: the mechanical de-scaling of the salmon or the innovative water de-scaling solution from Uni-Food Technic. The solution
