Riverence Provisions is North America’s largest vertically integrated producer of premium steelhead and rainbow trout.

 

The company produces gourmet trout fillets and smokehouse products at facilities in southern Idaho. Every Riverence trout has a fully traceable story. Consistent quality and efficient processing are critical to their operation. 

The challenge

Pin boning small rainbow trout fillets down to 70 g per fillet had proven difficult to streamline.

In addition, the daily handling of large volumes of butterfly trout fillets placed high demands on both capacity and consistency.

Riverence Provisions required a robust solution capable of maintaining fillet quality while operating reliably at large volume. 

The solution

After testing the equipment, Riverence Provisions decided to invest in four 4-lane Pin Bone Removers with neck bone roller (NK).

The neck bone roller removes the small neck bones. This improves overall removal efficiency and reduces the need for manual trimming after processing.

The result

The machines remove 90-95% of all pin bones automatically, with minimum yield loss.

The solution from Uni-Food Technic has significantly improved line performance and trout fillet quality, while manual rework has been reduced to a minimum.

The Pin Bone Remover handles fillets in many different sizes, from 70 g and up, and has a capacity of up to 50 fillets per minute, depending on model and fillet size.
